Best.Salmon….in the world!

So, I know I have told you how much we love our friends, Mike and Esther. We met them in Nicaragua and then they moved to Marietta…and we LOVE any time that we get to spend with them! They have two adorable little boys (who are some of the coolest kids I know) named Isaac and Oliver…so, we have a tradition of going to their house, hanging out outside while the boys play, and smoking some kind of meat on The Big Green Egg.

It was a beautiful night, so we sat in the drive way, eating appetizers (some amazing crab dip that Mike found at Publix, and some bruschetta I whipped up after finding some beautiful tomatoes at the market.) We ate, and the kids chased (and ate) bubbles while THE.BEST. salmon that any of us have ever had cooked away in the Green Egg!

Salmon is one of my favorite forms of protein. I love the buttery flavor and the healthy dose of omega 3′s that can be found in each serving. We eat salmon a lot…and we always love it. We thought we knew the best way to cook it…but I don’t think I will ever think of salmon the same way again.

Mike bought some regular, farm raised salmon at Publix…just like we always do…but then he worked the Big Green Egg magic. He used some kinds of spicy, cumin-y rub, and then put then pulled out the big guns…Cedar Planks! I love the Big Green Egg. It is kind of a part of life in my family…both sets of grandparents, most of my aunts and uncles, and my dad have been smoking all sorts of deliciousness for years…but never salmon!

The perfectly golden and perfectly smoky little beauties were served right off the cedar planks. I brought a barley and apple salad and a cantaloupe salad…but they were far out shined by the salmon! We ate and enjoyed great conversation…it was a lovely night with friends…and salmon that I will crave for years to come!

Barley Apple Salad

1 Cup barley cooked with 4 cloves crushed garlic
1 large apple, cut into small pieces
4 celery stalks, sliced
1 medium VIDALIA onion, chopped
1/4 Cup fresh parsley, chopped
1/8 Cup apple cider vinegar
2 T extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon fresh cracked pepper

Mix everything together in a large bowl and serve cold!

Cantaloupe Salad

1 cantaloupe, cubed
1/4 Cup fresh mint, chopped
1 teaspoon red pepper flakes
1/2 teaspoon salt
1 lemon, juiced

Mix everything together…let it sit for a few hours so that the flavors mesh together and serve!
