Curried Cauliflower

Well, this past week has been insane…so the cooking has been VERY minimal…lots of quick salads, omelets and steamed veggies…so, needless to say, I am SO happy to be home from the next three weeks to see friends, spend time with family and get to make meals from my very tiny kitchen!

Last night, after a day of running around and trying to catch up on the life that we missed in the past month of traveling, I decided to make a “real” dinner…and instead of just steaming veggies, I decided to mix things up and make curried cauliflower as one of our side dishes!

Curried Cauliflower
1 head of cauliflower, cut into bite sized pieces
1/4 Cup 0% plain greek yogurt
1 teaspoon curry powder
1/4 teaspoon tumeric
1/4 teaspoon salt
Pinch of red pepper flakes
1/2 lemon, juiced

To get started, steam the cauliflower.

Once the cauliflower is steamed, drain it, leaving about 1/8 Cup water in the pot.

In a small bowl, mix yogurt, curry, tumeric, salt, red pepper flakes (if you like spicy food) and lemon juice. Pour the mixture over the steamed cauliflower and stir until combined.

Let the cauliflower mixture cook for about 5 more minutes.

I served the cauliflower with grilled chicken and steamed basmati rice. YUM!
